Turkey Chowder
With the cold weather, there is nothing better than a warm meal to fill the belly. Here’s an easy, delicious dish to make for the whole family.
6 cups diced russet potatoes
2 cups corn
1 ½ cups shredded carrots
2 cups chicken broth
3 cups turkey
2 tablespoons minced garlic
3 tablespoons olive oil
1 yellow onion
2 cups celery
1 cup butter (2 sticks)
2 cups flour
5 ½ cups half and half
1-2 tablespoons salt
2 tablespoons black pepper
1 tablespoon white pepper
2 teaspoons celery salt
- Dice and boil potatoes.
- Add corn and carrots to potatoes and boil until almost tender.
- Drain water and add chicken broth to potato mixture.
- Add diced turkey to vegetables.
- In separate skillet combine yellow onions, celery and minced garlic and saute on med-high.
- Heat until onions are translucent.
- Combine mixture with turkey and potatoes.
- In the sauce pan or deep skillet melt butter and stir in flour until it is a paste. Gradually add in half and half until thoroughly blended with no lumps. Add to the turkey and vegetable mixture.
- Add spices, heat and it’s ready to serve.
