Turkey Chowder

 

With the cold weather, there is nothing better than a warm meal to fill the belly. Here’s an easy, delicious dish to make for the whole family.

 

6 cups diced russet potatoes

2 cups corn

1 ½ cups shredded carrots

2 cups chicken broth

3 cups turkey

2 tablespoons minced garlic

3 tablespoons olive oil

1 yellow onion

2 cups celery

1 cup butter (2 sticks)

2 cups flour

5 ½ cups half and half

1-2 tablespoons salt

2 tablespoons black pepper

1 tablespoon white pepper

2 teaspoons celery salt

 

  1. Dice and boil potatoes.
  2. Add corn and carrots to potatoes and boil until almost tender.
  3. Drain water and add chicken broth to potato mixture.
  4. Add diced turkey to vegetables.
  5. In separate skillet combine yellow onions, celery and minced garlic and saute on med-high.
  6. Heat until onions are translucent.  
  7. Combine mixture with turkey and potatoes.
  8. In the sauce pan or deep skillet melt butter and stir in flour until it is a paste.  Gradually add in half and half until thoroughly blended with no lumps. Add to the turkey and vegetable mixture.

 

  1. Add spices, heat and it’s ready to serve.
